
There is a distinct kind of kitchen magic that only requires three humble ingredients: flour, butter and buttermilk.
Growing up, watching a batch of biscuits come together felt less like cooking and more like a quiet morning ritual. It’s the soft thud of the wooden rolling pin, the snowstorm of flour dusting the counter, and the comforting aroma that seems to fill every crack and corner of the house as they bake.
Today, we’re opening up the vintage recipe box to make an absolute Southern staple: the traditional, sky-high Southern Buttermilk Biscuit.
The Golden Rules of the Biscuit
Before we get our hands in the flour, there are three golden rules passed down by generations of Southern bakers to ensure that your biscuits are light, fluffy, and towering:
- Keep it Ice-Cold: Your butter and your buttermilk should be as cold as a mountain stream. Don’t take them out of the refrigerator until the exact moment you need them.
- Be Gentle with the Dough: Treat your dough like a delicate antique. Over-kneading develops gluten, which makes biscuits tough instead of tender. Work it just enough that the dough holds together.
- Never Twist the Cutter: When you press your biscuit cutter (or the rim of an old glass) into the dough, press straight down and pull straight up. Twisting, seals the edges of the dough, locking it down and preventing those beautiful layers from rising!

Gather Your Tools & Ingredients
2 1/2 cups. Self-Rising Flour (Thoroughly sifted)
1/2 cup (1 stick) Unsalted Butter (Frozen or ice-cold)
1 cup. Buttermilk (Shaken and Cold)
2 tbsp. Melted Butter (For brushing the tops)
The Method
Chill and Preheat: Preheat your oven to 425ºF (218ºc). If you are using a cast-iron skillet, place it in the oven while it heats to get it nice and hot. Toss your stick of butter into the freezer for 10 minutes before starting.
Incorporate the Fat: Place your sifted flour into a wide bowl. Using the large holes of a box grater, grate the frozen butter directly into the flour. Gently toss with your fingers so every piece of butter is coated in flour. It should look like coarse crumbs.
Add the Buttermilk: Make a small well in the center of the flour. Pour in the cold buttermilk. Using a wooden spoon or a vintage push whisk, gently stir from the outside in until a shaggy dough just begins to form. It will be sticky!
The Secret Envelope Fold: Turn the dough out onto a well-floured surface. Gently pat it into a rough rectangle. Fold the dough in half, turn it 90 degrees, and pat it down again. Repeat this folding process 5 to 6 times. This creates the literal layers of burlap-like texture inside the biscuit!
Cut and Bake: Pat the dough down to about 1-inch thickness. Press your cutter straight down into the dough. Place the biscuits in your hot skillet or baking pan so their shoulders are just touching-this helps them prop each other up as they rise. Bake for 12-15 minutes until the tops are golden brown.
The Finishing Touch: The moment they emerge from the oven, brush the tops generously with the melted butter. Serve them warm with a drizzle of honey, a spoonful of blackberry jam or right alongside a hot skillet of gravy.
