
As the late-summer sun warms the earth, baking a fresh loaf of braided bread stands as the quintessential center of any Lammas celebration. Truthfully, it is one of my absolute favorite traditions! Honoring the very first harvest of the season, this ancient “Loaf Mass” tradition invites and reminds us to slow down, roll up our sleeves, and transform the simple gifts of grain, raw honey, and garden herbs into something deeply nourishing. Breaking this golden, home-baked bread with your family or community isn’t just about enjoying a delicious bite—it is a conscious act of gratitude for the fruits of our hard work and a quiet celebration of nature’s endless abundance. Lammas Honey & Herb Braided Loaf
Prep time: 20 mins | Rise time: 1.5 hours | Bake time: 30 mins
- The Grain & Yeast: 4 cups all-purpose flour (or bread flour), 1 packet (2 1/4 tsp) active dry yeast, 1 1/4 cups warm water (around 110°F)
- The Harvest Sweetener & Fat: 3 tbsp raw honey, 3 tbsp melted butter (plus extra for brushing), 1 large egg (at room temperature)
- The Seasoning: 1 1/2 tsp salt, 2 tbsp freshly chopped herbs (rosemary, thyme, or sage work beautifully)
- The Glaze: 1 egg beaten with 1 tbsp water (for egg wash), coarse sea salt, and dried herbs for sprinkling
The Method
- Proof the Yeast: In a large bowl, whisk the warm water, raw honey, and yeast together. Let it sit for 5–10 minutes until it becomes frothy and fragrant.
- Mix the Dough: Stir in the melted butter, room-temperature egg, chopped fresh herbs, and salt. Gradually add the flour, one cup at a time, until a soft dough forms.
- Knead: Turn the dough onto a lightly floured board and knead for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1 hour (or until doubled in size).
- Braid the Loaf: Punch down the risen dough and divide it into three equal pieces. Roll each piece into a rope roughly 12 inches long. Line up the three ropes on a parchment-lined baking sheet, pinch the top ends together, and weave a simple three-strand braid. Pinch the bottom ends to seal, tucking them slightly under.
- Second Rise & Bake: Cover loosely and let rise for 30 minutes while you preheat your oven to 375°F (190°C).
- Glaze and Bake: Brush the top generously with your egg wash and sprinkle with coarse sea salt and a few herb leaves. Bake for 25–30 minutes until the crust turns a rich, golden brown and sounds hollow when tapped on the bottom.
- Serve: Brush with a bit of extra melted butter while warm, let cool slightly, and break bread with family or friends to celebrate the first harvest!
